Ingredients:
- 2 Cans of Chopped Tomatoes
- 1 Can of Corn
- 1 Large Carrot
- 2 Stalks of Celery
- 1 lb of Chicken (shredded)
- 2 Tsps of Cumin
- Garlic Salt
- 1 Onion
- 1 Can of Red Beans
- 1 Yellow Potato
You need to start off with a little prep work and once that's done, this recipe couldn't get any easier!
1. First, cook the chicken, shred, and place to the side.
2. Chop the onion, carrot, celery and potato into small cubes and then place aside with the chicken.
3. Place your pot on the stove and set the heat to medium-low.
4. Now, open the the 2 cans of tomatoes and red beans and place into your cooking pot.
5. Add the onion, carrot, celery and potato and add as much corn as you want (I ended up putting about half a can).
6. Next, add the chicken, cumin and a generous sprinkle of garlic salt.
7. Time to thoroughly stir your mixture.
8. Place the lid on top of the pot and let simmer/cook for 1 hr and 15 minutes.
9. The smell that will permeate your home is amazing...uncover that pot and dig in!
